- Chill your coconut milk overnight so that you can scoop out the solid cream in the morning. Set aside the liquid at the bottom for use in future recipes.
- Using a mixer, beat the coconut milk in a bowl until creamed together, light and fluffy, this should take just under a minute.
- Add 2 tablespoons of peanut butter and mix into the coconut cream. Add more as required according to taste.
- Scoop the mousse into the chocolate cups and top with a layer of Manuka honey.
