Peanut Butter and Manuka Honey Mousse in Chocolate Cups

  1. Chill your coconut milk overnight so that you can scoop out the solid cream in the morning. Set aside the liquid at the bottom for use in future recipes.
  2. Using a mixer, beat the coconut milk in a bowl until creamed together, light and fluffy, this should take just under a minute.
  3. Add 2 tablespoons of peanut butter and mix into the coconut cream. Add more as required according to taste.
  4. Scoop the mousse into the chocolate cups and top with a layer of Manuka honey.
