preparation
- Peel and grete the carrots. Add the chopped chives.
- Add the vegan soft cheese, horseradish, salt and pepper to taste. Mix well.
- Toast the bread for added crispness.
- Spread half of the bread with the carrot-horseradish-mix and decorate with the salad leaves. Now add the top half on and enjoy.

I had this in a gluten free seeded bun when I visited Tibits restaurant in Lausanne-Gare, and I have to say it was amazingly tasty, I am not vegetarian or vegan and This has totally changed my view of meat and dairy free food!
